Keto Granola Bars
Keto granola bars are infused with a lot of sustainable energy while simultaneously being rich in good fats. These easy to make energy bars can be considered as the modern-day replicas of the energy balls that Nordic mountain warriors used to carry (with different ingredients of course)! These low carb granola bars can be used as a snack while being on the Keto diet, or can simply be used for sustainable energy during a trek or as a pre/post-workout snack.

- 1/2 cup Almond Butter
- 1/4 cup Extra Virgin Coconut Oil
- 1/4 cup Honey
- 1 Egg White
- 1 tsp Vanilla Extract
- 1/2 tsp Ground Cinnamon
- 1/4 teaspoon Salt
- 1 1/2 cups Desiccated Coconut
- 1 1/4 cups Sliced Almonds
- 1/4 cup Sunflower Seed
Preheat the oven to 350 F. Line the baking dish with parchment paper and set aside.
Take a large container. Add almond butter, extra virgin coconut oil, and honey, and heat it over medium flame. Keep whisking till the honey dissolves. Remove from heat and let it cool for 5 mins.
Stir in cinnamon, salt, vanilla, egg white, desiccated coconut, sliced almonds, sunflower seeds until combined.
Pour mixture into the baking pan and spread evenly with a spatula.
Bake in preheated oven for 15-20 minutes, until edges are slightly brown.
Remove pan from oven and allow it to cool. Transfer the uncut bars to a cutting board and cut it into even rectangles with the help of a knife.
You can put the bars in an airtight container and store them in the freezer for up to 2 months.
